60% Cabernet Sauvignon, 20% Cabernet Franc, 20% Merlot A late-harvest wine where Cabernet Franc and Cabernet Sauvignon are hand-picked and pressed the same day, while Merlot dries for 20–30 days in a loft. Spontaneous fermentation with indigenous yeast in concrete tanks for around 40 days, then 30 months in new French barriques and 1 year in bottle. Very appealing and bold with plum and forest fruit jam, incredible length matched to pepper, herbs and clay flavors
